This episode's technical featured the rolled roulade. I did some research and a roulade is a rolled item, not unlike a swiss roll, however, it can be made of anything, not just cake. So all swiss rolls are roulades but not all roulades are swiss rolls. In Mary Berry's chocolate roulade recipe, she uses a flourless chocolate cake that is rolled with whipped cream. I watch a video of her making the cake and was delighted because she clearly stated that it was OKAY if it cracked. After being truly nervous about my yule log cracking, I am all for a crackable rolled cake!
You can see the video I watched on YouTube. I love her style because it makes you feel like you can just bake, no stress. I can't image it is like that in the tent!
I followed her recipe here as there was not one posted on the GBBO website but there is a link to it in the YouTube video too. Mary is keen on a roulade so she has a few variations.
